The half-moon of Bengali and Bihari weddings — maida pastry over khoya-nut filling, fried gold and glazed in syrup. Chandrakala is the crescent moon; open one and find the feast inside.

Ingredients
- Ghee2 tbsp
- All-Purpose Flour1.5 cups
- Sugar1 cup, for syrup
- Cashews2 tbsp, chopped
- Peanut Oilfor deep frying
- Almonds2 tbsp, chopped
- Green Cardamom4, powdered
- Khoa (Mawa)3/4 cup, roasted
Instructions

Knead maida with ghee into a soft pastry dough; rest 30 minutes.

Roast khoya lightly; mix with chopped nuts and cardamom.

Fill half-moons, crimp edges firmly.

Fry on low till deep, even gold.

Dip briefly in syrup and cool till the glaze sets.
