The Maharashtrian-Delhi sweet that looks like a poppy-seeded sun — aged rice-jaggery dough fried slowly till a crackled crust forms over a melting heart. Patience is the entire recipe.

Ingredients

  • Ghee1 tbsp
  • Peanut Oil1 cup + for frying
  • Rice Flour1.5 cups, freshly ground
  • Jaggery3/4 cup
  • Green Cardamom4, powdered
  • Poppy Seeds1/4 cup, for coating

Instructions

    Soak rice, dry fully and grind extra fine.

    Knead with jaggery and cardamom; rest 12 hours overnight.

    Shape balls and press into poppy seeds.

    Fry in ghee-oil on very low, anarsa side down, without stirring.

  5. 5

    Flip once, finish, and cool on a rack — the cracks set as they cool.

Chef's tip

No stirring in the first minutes of frying — anarsa needs to set undisturbed or it dissolves.
