Tamil plantain crumble with coconut and curry leaves, temple-food simplicity. Simple, spiced straight-talk food — no gravy to hide behind. Best mopped up with hot chapatis straight off the flame.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Green Chili1-2, slit
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Curry Leaves2 sprigs
  • Lemon1
  • Red Chili Powder1 tsp
  • Plantain2, raw and sliced
  • Grated Coconut1 cup

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Dice the plantain uniformly, toss with a pinch of salt and let it sit while the masala comes together.

    Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

    Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

    Add the plantain and the grated coconut, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

    Kill the heat, stir through the cilantro and the lemon, and rest five minutes before serving.

Chef's tip

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
