Okra stuffed with a spiced fennel-amchur masala, slow-fried till blistered. The kind of homely bhaji that disappears fastest off the thali. Best mopped up with hot chapatis straight off the flame.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion2, finely sliced
  • Tomato2, chopped
  • Green Chili1-2, slit
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Okra250 g, topped and tailed
  • Red Chili Powder1 tsp
  • Fennel Seeds1 tsp
  • Amchur (Dry Mango Powder)1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Wash and cut the okra into even, bite-size pieces so everything cooks at the same pace.

    Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

    Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

    Turn the okra through the masala with the amchur (dry mango powder), clamp on a lid and let the steam work — check after 10 minutes.

    Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.

Chef's tip

A pinch of sugar balances tomatoes that lean too sharp.
