Okra strips dusted in gram flour and fried till shatter-crisp, chaat masala mandatory. The kind of homely bhaji that disappears fastest off the thali. Pile beside phulka and a bowl of cooled yogurt.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Green Chili1-2, slit
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Lemon1
  • Okra250 g, topped and tailed
  • Gram Flour1 cup
  • Chaat Masala1 tsp
  • Red Chili Powder1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Dice the okra uniformly, toss with a pinch of salt and let it sit while the masala comes together.

    Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

    Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

    Add the okra and the gram flour, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

    Finish with garam masala, cilantro and a knob of butter for gloss.

Chef's tip

If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
