Tindora nu Shaak
Gujarati ivy gourd and potato shaak, everyday thali gold. A one-pan weeknight sabzi that asks for little and gives a lot. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Lemon1
- Red Chili Powder1 tsp
- Grated Coconut1 cup
- Ivy Gourd (Kovakkai)2 cups, slit
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash and cut the ivy gourd (kovakkai) into even, bite-size pieces so everything cooks at the same pace.

Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Turn the ivy gourd (kovakkai) through the masala with the potato, clamp on a lid and let the steam work — check after 10 minutes.

Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.
Chef's tip
A pinch of sugar balances tomatoes that lean too sharp.
