
Jimikand ki Bhaaji
Yam cubes fried and finished with ginger and amchur, UP's beloved jimikand. Simple, spiced straight-talk food — no gravy to hide behind. Best mopped up with hot chapatis straight off the flame.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Red Chili Powder1 tsp
- Yam300 g, cubed
- Amchur (Dry Mango Powder)1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Pat the yam dry and chop it into similar-sized chunks — dry surfaces brown better.

Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Turn the yam through the masala with the ginger, clamp on a lid and let the steam work — check after 10 minutes.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
