Makhana Aur Aloo ki Sabzi
Fox nuts and potato in a light masala, the fasting-day sabzi that tastes like festivity. A one-pan weeknight sabzi that asks for little and gives a lot. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Green Peas1 cup
- Cashews1/4 cup
- Red Chili Powder1 tsp
- Makhana (Fox Nuts)1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash and cut the makhana (fox nuts) into even, bite-size pieces so everything cooks at the same pace.

Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

Add the makhana (fox nuts) and the potato, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Kill the heat, stir through the cilantro and the green peas, and rest five minutes before serving.
Chef's tip
A pinch of sugar balances tomatoes that lean too sharp.
