Karnataka puffed rice tempering, five-minute chai-time filler. Fluffy, tangy, one pan — done before the coffee brews. Serve warm with coconut chutney on the side.

Ingredients

  • Saltto taste
  • Onion2, finely sliced
  • Ginger1 tbsp, minced
  • Green Chili2, slit
  • Turmeric Powder1/4 tsp
  • Vegetable Oil2 tbsp
  • Mustard Seeds1 tsp
  • Curry Leaves2 sprigs
  • Lemon1/2
  • Peanuts1/2 cup, roasted
  • Puffed Rice (Murmura)4 cups

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Dry-roast the puffed rice (murmura) (if using rava or vermicelli) till nutty and just golden; set aside. Flattened rice needs only a rinse and drain.

    Splutter mustard seeds, tip in the curry leaves and chilies, and let the oil get fragrant.

    Fry the onions till soft and translucent, add ginger and turmeric; two minutes more.

    Add the onion, saute a minute, then fold in the prepared puffed rice (murmura) with salt and a splash of water.

    Steam briefly covered, then cut through the mixture and fluff; squeeze lemon over and shower with cilantro and coconut.

Chef's tip

Roasting the rava until just golden is the difference between upma and paste.
