
Gujarati Batata Poha
Potato-studded poha, the Kanda Poha cousin with more bite. Fluffy, tangy, one pan — done before the coffee brews. Plate with a wedge of lemon and extra fried curry leaves.
Ingredients
- Saltto taste
- Onion2, finely sliced
- Ginger1 tbsp, minced
- Green Chili2, slit
- Turmeric Powder1/4 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Lemon1
- Flattened Rice (Poha)2 cups, thick variety
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Prepare the flattened rice (poha): roast if it's rava, rinse if it's poha, soak if it needs it.

Splutter mustard seeds, tip in the curry leaves and chilies, and let the oil get fragrant.

Fry the onions till soft and translucent, add ginger and turmeric; two minutes more.

Add the potato, saute a minute, then fold in the prepared flattened rice (poha) with salt and a splash of water.

Steam briefly covered, then cut through the mixture and fluff; squeeze lemon over and shower with cilantro and coconut.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
