Kolkata Ghugni
Kolkata's yellow-pea ghugni, evening paper and jhalmuri's best friend. The flavours of an Indian market at dusk, built on a plate. Eat immediately, standing up, ideally with friends.

Cook the base element — boil, fry or toast it — till it is exactly right; texture is the whole story here.

Build the moisture layer: green chutney at the edges, sweet tamarind in crosses, yogurt last.

Shower with the dry elements: chaat masala, roasted cumin, chili, and the crunchy topping — do this at the last second so it stays loud.
