Indori Bhutte ka Kees

🇮🇳 Indian

Indore's grated corn in spiced milk, monsoon street legend. Bold, loud, sweet-hot-sour-tangy all at once — India's street food playbook. Serve in paper plates for the full street experience.

Prep 23 min Cook 21 min Serves 1 Medium

Ingredients

  • Saltto taste
  • Onion1, finely chopped
  • Ginger2-inch piece
  • Green Chili2
  • Lemon1
  • Milk1 litre
  • Chaat Masala1 tsp
  • Roasted Cumin1 tsp
  • Corn2 cups

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

  1. 1

Set out everything mise-en-place: this is assembly food, and it moves fast once you start.

  2. 2

Get the base going: crisp what should be crisp, soft what should be soft.

  3. 3

Layer on the wet elements — chutneys, yogurt, gravies — generously; restraint is for restaurants.

  4. 4

Season aggressively — street vendors' hands are heavy with masala, and yours should be too.

  5. 5

Scatter the milk and cilantro, add one more drag of chutney, and put it in front of someone immediately.

Chef's tip

Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
