Mangalore goli baje, pillowy doughnuts of the Udupi breakfast table. Fried gold, built for rainy afternoons and strong chai. Best with green chutney and a rain outside.

Ingredients

  • Yogurt2 cups, whisked
  • Ginger Garlic Paste1 tsp
  • Saltto taste
  • Green Chili2
  • Turmeric Powder1/2 tsp
  • Vegetable Oilfor deep frying
  • Curry Leaves2 sprigs
  • Asafoetidaa pinch
  • All-Purpose Flour2 cups
  • Gram Flour1 cup
  • Ajwain1/2 tsp
  • Rice Flour2 tbsp

Instructions

    Mix the all-purpose flour into a seasoned batter with the yogurt, resting it ten minutes so the flours hydrate.

    Get the oil shimmering but not smoking; steady medium-high is the fritter zone.

    Fry in batches of six or so, nudging them apart; crowding drops the oil temperature and the crunch.

    Cook three to four minutes a side until the sizzle quietens, then drain on a wire rack.

    Eat immediately — a fritter's glory is measured in minutes.

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
