Stuffed Bread Pakoda
Stuffed bread pakoda, the college-canteen monsoon hero. Craggy, crisp and impossible to eat just one of. Plate with fried green chilies and a dusting of chaat masala.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Potato3 medium, cubed
- Asafoetidaa pinch
- Gram Flour1 cup
- Ajwain1/2 tsp
- Rice Flour2 tbsp
- Bread4 slices
Instructions

Mix the bread into a seasoned batter with the gram flour, resting it ten minutes so the flours hydrate.

Warm the oil till a test droplet sizzles and floats at once; too cool and everything goes greasy.

Drop spoonfuls of the batter into the oil without crowding; they should each have room to swim.

Let them take their colour slowly; deep gold means cooked centres and shattering crust.

Serve hot with chutney and fried green chilies, dusted with chaat masala if you're feeling street.

Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
