
Parippu Vada
Kerala dal vada, crisp-edged parippu vada with shallot bite. Craggy, crisp and impossible to eat just one of. Best with green chutney and a rain outside.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Onion2, finely sliced
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Curry Leaves2 sprigs
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Asafoetidaa pinch
- Gram Flour1 cup
- Ajwain1/2 tsp
- Rice Flour2 tbsp

Make the batter: whisk the yellow lentils (toor dal) with the onion, gram flour, salt and just enough water for a thick, clinging consistency.

Warm the oil till a test droplet sizzles and floats at once; too cool and everything goes greasy.

Fry in batches of six or so, nudging them apart; crowding drops the oil temperature and the crunch.

Let them take their colour slowly; deep gold means cooked centres and shattering crust.

Pile up, salt lightly, and serve with mint chutney and ketchup within arm's reach.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
