
Rava Vadai
Crisp rava vada, instant-crunch cousin of medu vada. Fried gold, built for rainy afternoons and strong chai. Serve with mint or tamarind chutney and masala chai.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tsp
- Saltto taste
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Curry Leaves2 sprigs
- Asafoetidaa pinch
- Gram Flour1 cup
- Ajwain1/2 tsp
- Rice Flour2 tbsp
- Semolina (Rava)1 cup
Instructions

Mix the semolina (rava) into a seasoned batter with the yogurt, resting it ten minutes so the flours hydrate.

Warm the oil till a test droplet sizzles and floats at once; too cool and everything goes greasy.

Fry in batches of six or so, nudging them apart; crowding drops the oil temperature and the crunch.

Cook three to four minutes a side until the sizzle quietens, then drain on a wire rack.

Pile up, salt lightly, and serve with mint chutney and ketchup within arm's reach.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
