
Maddur Vada
Karnataka's Maddur vada, onion-rich and semolina-crisp. Fried gold, built for rainy afternoons and strong chai. Plate with fried green chilies and a dusting of chaat masala.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Onion2, finely sliced
- Green Chili2, finely chopped
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Curry Leaves2 sprigs
- Asafoetidaa pinch
- Gram Flour1 cup
- Ajwain1/2 tsp
- Rice Flour1 cup
- Semolina (Rava)1 cup

Make the batter: whisk the rice flour with the onion, gram flour, salt and just enough water for a thick, clinging consistency.

Warm the oil till a test droplet sizzles and floats at once; too cool and everything goes greasy.

Drop spoonfuls of the batter into the oil without crowding; they should each have room to swim.

Let them take their colour slowly; deep gold means cooked centres and shattering crust.

Serve hot with chutney and fried green chilies, dusted with chaat masala if you're feeling street.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
