Mysore Urad Bonda
Cloud-soft Mysore bonda with ginger bite, coconut chutney mandatory. Hot oil, thick batter, monsoon weather optional — India's favourite snack format. Plate with fried green chilies and a dusting of chaat masala.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Ginger2-inch piece
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Urad Dal2 cups, chopped
- Asafoetidaa pinch
- Gram Flour1 cup
- Ajwain1/2 tsp
- Rice Flour1 cup

Combine the urad dal with the rice flour and the flours; add water slowly — the batter should coat a spoon, not run off it.

Get the oil shimmering but not smoking; steady medium-high is the fritter zone.

Slide the batter in with two spoons — rough, craggy shapes fry crispest.

Cook three to four minutes a side until the sizzle quietens, then drain on a wire rack.

Pile up, salt lightly, and serve with mint chutney and ketchup within arm's reach.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
