Sabudana Thalipeeth

🇮🇳 Indian

Fasting thalipeeth of sabudana and peanut, crisp at the edges. Rolled, rested and flame-kissed — the real thing. Best with a rich gravy and sliced raw onions.

Prep 23 min Cook 24 min Serves 3 Medium

Ingredients

  • Saltto taste
  • Green Chili2
  • Ghee2 tbsp
  • Potato3 medium, cubed
  • Peanuts1/2 cup, roasted
  • Sago (Sabudana)1 cup, soaked

Instructions

  1. 1

Combine flour, salt and water into a shaggy mass, then knead till smooth and supple; rest covered 20 minutes.

  2. 2

Rest the dough, covered with a damp cloth, for at least 30 minutes — gluten relaxes, rolling gets easier.

  3. 3

Divide into equal balls, then roll — plain, or stuffed and sealed like little parcels before rolling gently.

  4. 4

Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.

  5. 5

Finish with a slick of butter and eat while the first one is still steaming.

Chef's tip

Stuffed breads need gentle rolling — burst filling is heartbreak.
