
Vanela Dhebra
Gujarati bajra dhebra, jaggery-sweet roti for winter mornings. Soft-centred, blistered and buttered; bread as daily ritual. Serve with any curry, dal or pickle on the table.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Ghee2 tbsp
- Sesame Seeds1 tsp
- Jaggery3/4 cup, grated
- Pearl Millet (Bajra)1 cup
Instructions

Bring the dough together with lukewarm water, then knead hard — soft dough makes soft bread, no shortcuts.

Cover and rest; use this time to make the filling or get the pan hot.

Portion the dough, stuff and pinch the seams closed, then roll with a feather touch so nothing bursts.

Cook the first side dry, the second side with ghee, and finish directly on the flame for the puff.

Slather with ghee, wrap in a clean cloth, and carry to the table warm.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
