Bihari Sattu Paratha
Bihari sattu paratha, roasted gram flour filling that needs no cooking. Soft-centred, blistered and buttered; bread as daily ritual. Serve with any curry, dal or pickle on the table.
Ingredients

- Onion2, finely sliced
- Ghee2 tbsp
- Gram Flour1 cup
- Ajwain1 tsp
- Wheat Flour3 cups
Instructions

Bring the dough together with lukewarm water, then knead hard — soft dough makes soft bread, no shortcuts.

Cover and rest; use this time to make the filling or get the pan hot.

Shape each ball, flatten, and either roll plain or enclose a spoonful of filling and roll with the seam down.

Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.

Brush with butter or ghee, stack in a cloth to keep steam-soft, and serve immediately.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
