Peshawari Naan
Sweet-stuffed Peshawari naan, dry fruit dessert-bread. Rolled, rested and flame-kissed — the real thing. Pile in a basket lined with cloth and let everyone grab.
Ingredients
- Saltto taste
- Ghee2 tbsp
- All-Purpose Flour2 cups
- Golden Raisins2 tbsp
- Almonds1/4 cup, blanched and slivered
- Coconut1/2, grated
Instructions
- 1
Bring the dough together with lukewarm water, then knead hard — soft dough makes soft bread, no shortcuts.
- 2
Cover and rest; use this time to make the filling or get the pan hot.
- 3
Shape each ball, flatten, and either roll plain or enclose a spoonful of filling and roll with the seam down.
- 4
Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.
- 5
Slather with ghee, wrap in a clean cloth, and carry to the table warm.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
