Poha payasam, the five-minute festival dessert of Kerala. The taste of every good news day in an Indian household. Plate in petit-four pieces with tea or as prasad.

Ingredients

  • Salta pinch
  • Ghee3 tbsp
  • Milk1 litre
  • Sugarto taste
  • Cashews1/4 cup
  • Jaggery3/4 cup, grated
  • Flattened Rice (Poha)2 cups, thick variety
  • Green Cardamom4, ground

Instructions

    Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.

    Put the flattened rice (poha) and milk on a steady medium flame and commit to stirring — sweets test your patience.

    Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

    Add the jaggery, cardamom and any nuts or saffron; fold through and cook two minutes more.

    Shape or slice once it has cooled enough to handle; it firms up as it rests.
