Chakka Varatti
Kerala jackfruit jam, chakka varatti cooked down for hours. The taste of every good news day in an Indian household. Best after resting an hour; the flavours settle.
Ingredients
- Salta pinch
- Ghee3 tbsp
- Sugarto taste
- Jackfruit500 g, raw and cubed
- Grated Coconut1 cup
- Jaggery3/4 cup, grated
- Green Cardamom4, ground

Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.

Start the base: the jackfruit and jaggery together in a thick pan, stirring so nothing catches.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Add the grated coconut, cardamom and any nuts or saffron; fold through and cook two minutes more.

Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
