
Churma Ladoo
Rajasthani churma ladoo, crumbled baati reborn as festive spheres. Festival sweetness, made the slow way. Serve at room temperature, cut small — sweetness needs no size.

- Jaggery3/4 cup, grated
- Green Cardamom4, ground

Combine the wheat flour with the jaggery in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Stir in the ghee with the cardamom; the aroma should bloom immediately.

Shape or slice once it has cooled enough to handle; it firms up as it rests.
