
Odisha Chhena Poda
Odia chhena poda, caramelised baked cheesecake of the Jagannath state. The taste of every good news day in an Indian household. Serve at room temperature, cut small — sweetness needs no size.

- Milk1 litre
- Sugar1 tsp
- Cashews1/4 cup
- Green Cardamom1 tsp

Combine the milk with the sugar in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

Add the green cardamom, cardamom and any nuts or saffron; fold through and cook two minutes more.

Shape or slice once it has cooled enough to handle; it firms up as it rests.
