
Karachi Halwa
Cornflour jelly halwa, stretchy Bombay sweet with cashew studs. Festival sweetness, made the slow way. Serve at room temperature, cut small — sweetness needs no size.
Ingredients
- Salta pinch
- Ghee3 tbsp
- Sugar1 tsp
- Corn Flour500 g
- Almonds1/4 cup, blanched and slivered
- Green Cardamom4, ground

Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.

Combine the corn flour with the sugar in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Add the ghee, cardamom and any nuts or saffron; fold through and cook two minutes more.

Shape or slice once it has cooled enough to handle; it firms up as it rests.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
