Balushahi, flaky discs that dissolve the moment they touch the tongue. Ghee, sugar, patience — the three ingredients in every Indian celebration. Serve at room temperature, cut small — sweetness needs no size.

Put the all-purpose flour and yogurt on a steady medium flame and commit to stirring — sweets test your patience.

Stir through the long middle stage until the mixture looks cohesive and smells toasty and rich.

Add the sugar, cardamom and any nuts or saffron; fold through and cook two minutes more.

Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
