Kalakand, grainy milk fudge from Alwar's sweet lanes. The taste of every good news day in an Indian household. Serve at room temperature, cut small — sweetness needs no size.

Ingredients

  • Ghee3 tbsp
  • Milk1 litre
  • Sugar1 tsp
  • Green Cardamom1 tsp
  • Khoa (Mawa)200 g

Instructions

    Prep first: nuts chopped, pans greased, trays ready — this recipe rewards organization.

    Combine the khoa (mawa) with the milk in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

    Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

    Season the mix with the sugar and green cardamom, reserving some nuts for the top.

    Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.

A final squeeze of lemon or lime right before serving wakes up every other flavour.
