
Punjabi Panjiri
Punjabi panjiri, dry-fruit dense winter fuel for new mothers. Festival sweetness, made the slow way. Plate in petit-four pieces with tea or as prasad.

Prep first: nuts chopped, pans greased, trays ready — this recipe rewards organization.

Combine the wheat flour with the almonds in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

Stir in the cashews with the cardamom; the aroma should bloom immediately.
