
Punjabi Pinni
Pinni, the ghee-ball winter soldier of Punjab. The taste of every good news day in an Indian household. Serve at room temperature, cut small — sweetness needs no size.
Ingredients
- Salta pinch
- Ghee3 tbsp
- Sugarto taste
- Wheat Flour3 cups
- Almonds1/4 cup, blanched and slivered
- Jaggery3/4 cup, grated
- Green Cardamom4, ground
Instructions

Measure everything before lighting the flame; there is no pause button mid-cook.

Combine the wheat flour with the jaggery in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

Add the ghee, cardamom and any nuts or saffron; fold through and cook two minutes more.

Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
