Nolen Gurer Sandesh
Date-palm jaggery sandesh, winter Bengal's proudest export. Ghee, sugar, patience — the three ingredients in every Indian celebration. Plate in petit-four pieces with tea or as prasad.

- Green Cardamom1 tsp
- Khoa (Mawa)200 g

Prep first: nuts chopped, pans greased, trays ready — this recipe rewards organization.

Combine the khoa (mawa) with the jaggery in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

Add the green cardamom, cardamom and any nuts or saffron; fold through and cook two minutes more.

Shape or slice once it has cooled enough to handle; it firms up as it rests.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
