Mangalore crab sukka, roast-coconut dry masala coating every claw. Minutes from pan to plate, as the sea intended. Plate with lemon wedges and nothing to distract.

Ingredients

  • Saltto taste
  • Onion1, finely chopped
  • Garlic4 cloves
  • Ginger1 tbsp, minced
  • Green Chili2
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Curry Leaves2 sprigs
  • Dried Red Chilies1 tsp
  • Lemon1
  • Red Chili Powder1 tsp
  • Crab2, cleaned and cracked
  • Grated Coconut1 cup

Instructions

    Prep the crab: clean, rinse and dry; wet seafood steams instead of searing.

    Heat oil and fry the aromatics — onion, garlic, green chili — till soft and golden.

    Bloom the spices with the grated coconut — half a minute of toasting, no more.

    Cook the crab briefly; the moment it turns opaque, the clock is at zero.

    Kill the heat, add the dried red chilies and lemon, and serve while it still sizzles.

Chef's tip

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
