
Kacche Papite Aur Matar ki Bhaaji
Raw papaya and peas stir-fried with ginger, firm and faintly peppery. The kind of homely bhaji that disappears fastest off the thali. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Green Peas1 cup
- Lemon1
- Red Chili Powder1 tsp
- Green Papaya2 cups, chopped
Optional extras
- Fresh Cilantro2 tbsp, chopped

Dice the green papaya uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Turn the green papaya through the masala with the green peas, clamp on a lid and let the steam work — check after 10 minutes.

Finish with garam masala, cilantro and a knob of butter for gloss.

Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
