
Kathal Aur Kela ki Bhaaji
Jackfruit and raw banana cooked together dry, the festive Bengali-enchor style. A one-pan weeknight sabzi that asks for little and gives a lot. Best mopped up with hot chapatis straight off the flame.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Red Chili Powder1 tsp
- Jackfruit500 g, raw and cubed
- Green Banana2, boiled and peeled
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Pat the jackfruit dry and chop it into similar-sized chunks — dry surfaces brown better.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Fold in the jackfruit with the green banana, sprinkle in a tablespoon of water, cover and steam until just done.

Kill the heat, stir through the cilantro and the ginger, and rest five minutes before serving.
Chef's tip
Roasted peanut powder stirred in at the end adds body without cream.
