Kulle Aur Fruits
Hollowed cucumber cups filled with fruit and spice, the kulle of Chandni Chowk's oldest stall. The plate where India keeps all of its favourite textures at once. Perfect as an evening snack with masala chai nearby.
Ingredients
- Yogurt1 cup, whisked
- Saltto taste
- Lemon1
- Tamarind Paste2 tbsp
- Cucumber1, diced
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Pomegranate Seeds1/2 cup
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Boil, fry or toast the base component until the texture is right; cool what needs cooling so the yogurt doesn't slump.

Whisk the yogurt smooth with a pinch of sugar and salt — it should pour slowly off the spoon.

Arrange the base on the plate and spoon the chutneys across — green for bite, tamarind for sweetness.

Cover the base with yogurt and let it pool at the edges before the spice shower.

Finish with the pomegranate seeds, a final pinch of black salt and serve at once.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
