Banarasi fruit chaat with spice rain, the evening offering outside Kashi Vishwanath. Sweet, sour, spicy, crunchy and cold in the same mouthful — chaat logic. Perfect as an evening snack with masala chai nearby.

Ingredients

  • Yogurt1 cup, whisked
  • Saltto taste
  • Lemon1
  • Tamarind Paste2 tbsp
  • Mixed Vegetables2 cups, chopped
  • Chaat Masala1 tsp
  • Red Chili Powder1/2 tsp
  • Roasted Cumin1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Pomegranate Seeds1/2 cup

Instructions

    Prep the crunchy and the soft components in separate bowls; assembly takes four minutes flat.

    Beat the yogurt till pourable and gloss-free; lumpy yogurt ruins an otherwise perfect chaat.

    Spread the base out flat and drag both chutneys across it in ribbons.

    Pour the yogurt over generously, then dust with chaat masala, roasted cumin and chili powder from a height.

    Finish with the chaat masala, a final pinch of black salt and serve at once.

Chef's tip

Fry the base elements twice for maximum crunch.
