
Aam Aur Chana Chaat
Raw mango and chickpea chaat, the summer cooler of Delhi fruit stalls. Yogurt-flooded, chutney-streaked and unapologetically messy. Perfect as an evening snack with masala chai nearby.
Ingredients
- Yogurt1 cup, whisked
- Saltto taste
- Chickpeas1 cup, soaked overnight
- Lemon1
- Tamarind Paste2 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
- Green Mango1, peeled and grated
Optional extras
- Fresh Cilantro2 tbsp, chopped

Boil, fry or toast the base component until the texture is right; cool what needs cooling so the yogurt doesn't slump.

Sweeten and salt the whisked yogurt; street stalls lean sweeter than you'd think.

Spread the base out flat and drag both chutneys across it in ribbons.

Pour the yogurt over generously, then dust with chaat masala, roasted cumin and chili powder from a height.

Top with the chickpeas, pomegranate seeds and fresh coriander; serve within five minutes, fork optional.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
