
Raj Kachori Stuffed
The giant kachori crowned with everything, the one-plate-meal of Jaipur chaat legend. Yogurt-flooded, chutney-streaked and unapologetically messy. Serve immediately with small plates and no judgement.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Tamarind Paste2 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
- Semolina (Rava)1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
- Pomegranate Seeds1/2 cup

Get the base ready — cooked, cooled and ideally at room temperature so the toppings sit proud.

Whisk the yogurt smooth with a pinch of sugar and salt — it should pour slowly off the spoon.

Arrange the base on the plate and spoon the chutneys across — green for bite, tamarind for sweetness.

Flood the plate with yogurt, then season hard — masala from a height falls evenly.

Bury it under the yogurt, add the jewelled garnish, and get it to the table while everything still crackles.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
