
Jowar Bhakri Aur Chutney
Jowar bhakri with dry garlic chutney, the Maharashtra plateau staple. Soft-centred, blistered and buttered; bread as daily ritual. Pile in a basket lined with cloth and let everyone grab.
Ingredients
- Saltto taste
- Green Chili2
- Ghee3 tbsp
- Grated Coconut1 cup
- Sorghum (Jowar)1 cup
Instructions

Bring the dough together with lukewarm water, then knead hard — soft dough makes soft bread, no shortcuts.

Rest the dough, covered with a damp cloth, for at least 30 minutes — gluten relaxes, rolling gets easier.

Divide into equal balls, then roll — plain, or stuffed and sealed like little parcels before rolling gently.

Cook on a hot tawa till brown blisters form, flip, then finish over an open flame (or in the pan with ghee) till it puffs.

Slather with ghee, wrap in a clean cloth, and carry to the table warm.

Rest the dough or it will fight you at the rolling pin.
