Bajra roti with a jaggery smear, the Rajasthani winter breakfast. Soft-centred, blistered and buttered; bread as daily ritual. Serve with any curry, dal or pickle on the table.

Ingredients

  • Salt1 tsp
  • Ghee3 tbsp
  • Jaggery3/4 cup, grated
  • Pearl Millet (Bajra)1 cup

Instructions

    Bring the dough together with lukewarm water, then knead hard — soft dough makes soft bread, no shortcuts.

    Rest the dough, covered with a damp cloth, for at least 30 minutes — gluten relaxes, rolling gets easier.

    Portion the dough, stuff and pinch the seams closed, then roll with a feather touch so nothing bursts.

    Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.

    Finish with a slick of butter and eat while the first one is still steaming.

Chef's tip

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
