Mysore Pak Ghee
Ghee-drenched Mysore pak, the melt-on-contact royal sweet of Karnataka palaces. Festival sweetness, made the slow way. Plate in petit-four pieces with tea or as prasad.

- Gram Flour1 cup

Prep first: nuts chopped, pans greased, trays ready — this recipe rewards organization.

Combine the gram flour with the ghee in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Season the mix with the sugar and green cardamom, reserving some nuts for the top.

Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
Chef's tip
Ghee should be fragrant but never browned past golden.
