Dharwad Peda
Dharwad peda's caramelised grain, the two-century sweet of Karnataka's milk belt. Ghee, sugar, patience — the three ingredients in every Indian celebration. Plate in petit-four pieces with tea or as prasad.
Ingredients
- Salta pinch
- Ghee3 tbsp
- Milk1 litre
- Sugar1 tsp
- Green Cardamom1 tsp
Instructions
- 1
Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.
- 2
Start the base: the milk and sugar together in a thick pan, stirring so nothing catches.
- 3
Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.
- 4
Season the mix with the green cardamom and green cardamom, reserving some nuts for the top.
- 5
Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
