Ingredients

  • Saltto taste
  • Green Chili2
  • Mint Leaves1/4 cup
  • Mustard Seeds1 tsp
  • Curry Leaves1 sprig
  • Dried Red Chilies2
  • Asafoetidaa pinch
  • Tamarind Paste2 tbsp
  • Roasted Cumin1 tsp
  • Coconut Oil1 tbsp

Instructions

    Chop, measure and line up; the cooking part is over before the radio finishes a song.

    Toast the tamarind paste lightly for depth, or keep it raw for brightness — both are correct.

    Grind the mint leaves with the tamarind paste, tamarind, green chilies and salt to a texture you like — smooth or rustic.

    Taste and adjust — salt, sour, heat; chutney should be slightly louder than the dish it accompanies.

    Pour the crackling tadka over the chutney and leave it sitting on top like a crown.
