
Lehsun Ki Lal Chutney
Rajasthani red garlic chutney, the chutney that makes dal-baati complete. The condiment that carries the meal — bright, punchy and made in minutes. Serve with idli, dosa, rice or anything that needs waking up.
Ingredients
- Saltto taste
- Tomato3, chopped
- Garlic6 cloves
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies1 tsp
- Asafoetidaa pinch
- Tamarind Paste1 tbsp
- Mustard Oil1 tsp
- Coconut Oil1 tbsp
Instructions

Get everything ready: fresh coconut or the garlic prepped, spices within reach — chutney takes minutes.

Briefly warm the dried red chilies in a dry pan until the kitchen smells like it means it.

Grind the garlic with the dried red chilies, tamarind, green chilies and salt to a texture you like — smooth or rustic.

Balance the three notes: more tamarind for sour, more chili for bite, salt to make both sing.

Finish with a sizzling tempering: mustard seeds, curry leaves and dried red chilies poured over the top; stir in only at serving.
Chef's tip
A pinch of jaggery rounds the heat beautifully.
