
Blueberry Custard Cups
Blueberries sinking through baked custard, the summer-fruit dessert. Cool and creamy, the kind of dessert that calms a big meal down. Serve chilled, straight from the fridge, in small glasses or ramekins.
Ingredients

- Milk1 litre
- Sugar1 tsp
- Vanilla Extract1 tsp
- Blueberries2 cups, chopped
- Egg Yolk1 cup, chopped

Set out all ingredients and the serving dishes first; the cooking itself moves quickly.

Scald the milk with the egg yolk — small bubbles at the edge, never a rolling boil.

Combine the blueberries with the sugar; stream in the hot milk slowly so nothing curdles.

Stir over medium-low until it visibly thickens, eight to ten minutes — patience here is everything.

Pour into dishes, chill at least four hours, and serve cold with milk on top.

With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
