Saffron Rice Pudding
Saffron-gold rice pudding with pistachios, the festive kheer of celebration days. Smooth, wobbly and elegant — restaurant-simple, home-easy. Serve chilled, straight from the fridge, in small glasses or ramekins.
Ingredients
- Salta pinch
- Saffrona pinch, soaked in warm milk
- Rice3/4 cup
- Milk1 litre
- Sugar1/3 cup
- Vanilla Extract1 tsp
- Pistachios1/2 cup, chopped
Instructions
- 1
Gather everything before you start — custards punish multitasking.
- 2
Warm the milk with the milk gently until steaming, not boiling, so the base stays smooth.
- 3
Combine the rice with the sugar; stream in the hot milk slowly so nothing curdles.
- 4
Stir over medium-low until it visibly thickens, eight to ten minutes — patience here is everything.
- 5
Divide between glasses, press clingfilm onto the surface, chill until set, then crown with saffron.
Chef's tip
Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
