Date and Walnut Pudding
Sticky date pudding's spoonable cousin, self-saucing under caramel sauce. Silky and spoonable, with a clean, comforting sweetness. Make it a day ahead — it only improves overnight.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk2 cups
- Sugar1/3 cup
- Vanilla Extract1 tsp
- Walnuts1 cup, chopped
- Brown Sugar1/2 cup
- Dates1 cup, pitted and chopped

Set out all ingredients and the serving dishes first; the cooking itself moves quickly.

Scald the milk with the walnuts — small bubbles at the edge, never a rolling boil.

Combine the dates with the sugar; stream in the hot milk slowly so nothing curdles.

Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.

Pour into dishes, chill at least four hours, and serve cold with brown sugar on top.

Weigh your flour if you can; cup measures can be off by twenty percent either way.
