- Ginger1 tbsp
- Eggs2
- Spring Onions3, sliced
- Soy Sauce3 tbsp
- Chicken Broth5 cups
- Mirin2 tbsp
- Ramen Noodles2 portions
- Pork Belly200 g sliced
Optional extras
- Sesame Oil1 tsp
- Nori Seaweed2 sheets
- Chili Flakespinch
Instructions

Simmer chicken or pork broth with soy, mirin, garlic and ginger 20 minutes.

Soft-boil eggs 7 minutes; ice bath and peel.

Cook ramen noodles; divide into bowls.

Ladle hot broth over noodles; top with sliced pork belly, egg halves, spring onions and nori.

Finish with sesame oil and chili flakes.
Chef's tip
Assemble in hot bowls so the noodles don't cool the broth instantly.
