Osaka-style savory cabbage pancake topped with okonomi sauce, mayo and spring onions — customizable teppan fun at home.

Ingredients

- All-Purpose Flour1 cup
- Cabbage4 cups shredded
- Spring Onions3, sliced
- Mayonnaise2 tbsp
- Neutral Oil2 tbsp
- Tonkatsu Sauce3 tbsp
- Kombu Dashi2/3 cup
Optional extras
- Pork Belly100 g thinly sliced optional
Instructions

Mix flour, dashi, egg and a pinch of salt into a loose batter.

Fold in heaps of shredded cabbage and spring onions; add diced pork or shrimp if using.

Oil a hot pan; pour batter into a thick round; press lightly.

Cook 4–5 minutes per side until set and browned.

Brush with tonkatsu/okonomi sauce, drizzle mayo, scatter spring onions and serve.
Chef's tip
Don't skimp on cabbage — it should look like barely-bound shreds, not a dense pancake.
